Parma is a prosperous and attractive historic town in the Emilia-Romagna region of northern Italy. It is famous for its fine cheese (parmigiano) and cured meats, and the area is renowned throughout Italy as one of the best places to eat. Parma is a surprisingly well-kept secret as far as tourism is concerned, perhaps because the well-to-do town feels little need to advertise its charms. This Field Learning activity will allow students to discover Parma’s gastronomical tradition by observing the production process of two world-renowned Italian products, the Prosciutto di Parma and the Parmigiano Regiano. Emphasis will be placed not only on the methods of production, but also to the international marketing and trade of quality food products, in particular, the protected designation of origin products. The Consortiums for the protection of traditional food products, which run promotions in Italy and throughout the world, are also an excellent example of Territorial Marketing.

Itinerary: 

Morning departure from Florence to Parma. Guided visit of a ‘prosciuttificio’ (ham factory) and tasting. Transfer to a ‘caseificio’ (chease factory), guided visit and product tasting. Time to work on FL assignments and free time. Return to Florence in the early evening.

  • Gain a broader knowledge of food and products that are unique to the Italian territory, history, and culture
  • Describe the processes of production of Prosciutto di Parma and Parmesan cheese
  • Analyze the strategies for international marketing and trade of quality food products.
  • Identify the EU product regulations and their effects on the local economy
  • Explain EU Quality Logos such as PDP (Protected Designation of Origin) and PGI (Protected Geographical Indication) and their relevance to local products in Italy and Europe (PDO)
